DIY nut milks are, of course, more time consuming than their store bought versions, but they are also super easy to make, much more clean (without any commercial additives), are more versatile, and are really delicious. If you are tired of almond or coconut milk, for example, why not try pistachio? Here you go:
1 cup raw and shelled pistachios
4 cups filtered water for soaking + 3 cups for blending
Variations: vanilla, cinnamon, a date for added sweetness
Soak pistachios overnight in filtered water.
Rinse pistachios and place in blender.
Add 3 cups of fresh filtered water.
Blend for 5 minutes alternating from low to high.
Filter milk through nut-milk bag or cheesecloth.
Cover and refrigerate for 3 - 5 days.
