This recipe is another super easy, one dish meal that is also nutrient dense, really versatile and tasty! You are only limited by your imagination 😊 In the picture above, I used ground lamb, but you can use any ground meat. You can also change out or add vegetables, and/or add spices and herbs based on your taste and preferences.
Ground Meat and Veggie Skillet (serves 4)
1 lb ground lamb, beef, turkey or chicken
1 small head of cabbage, finely shredded (or any other leafy green or mix of greens; may need to adjust cooking time depending on the green)
1 c coarsely chopped mushrooms (can also add asparagus, carrots, zucchini, etc)
1 medium sweet potato, spiralized (can sub with any other starchy root veggie, or a non-starchy veggie, if you are trying to keep it low carb)
3/4 tsp sea salt
Sautée meat over medium heat until browned. Add salt.
Add shredded cabbage and mushrooms on top of the browned meat. Cover the pot and cook for around 5 minutes, until veggies have softened from the steam (you may need to add a little bit of water, if you use a lean meat where there is not a lot of fat to help cook the vegetables).
Mix everything up and add the spiralized sweet potatoes. Cover again and cook for another 3 - 5 minutes, until sweet potatoes have softened.
Mix it all together, serve and enjoy!
