I am a big fan of ease in the kitchen, as long as the dish tastes good and is full of nutrients! This recipe is a super easy, one dish (pan) meal that is also very versatile, nutrient dense and tasty. Feel free to apply this same approach to a variety of combinations based on your prefernces.
One Pan Sausage and Vegetables (3 - 4 servings)
12 oz package organic sausage, I used this one: Applegate Farms Sweet Italian Chicken Sausage
1 medium sweet potato, peeled and diced into evenly sized pieces
1 head of broccoli, cut into florets (can sub with cauliflower, Brussels, asparagus, etc)
1 small red onion, diced
Extra virgin olive oil, avocado oil or coconut oil to coat vegetables
Sea salt and pepper to taste
Heat oven to 400 F.
Place vegetables and sausage in a single layer on a baking sheet lined with parchment paper (see image below).
Drizzle and coat vegetables with oil of choice.
Place in oven and cook for 15 minutes (if using asparagus, you may want to wait to add to baking sheet until the second half of roasting).
Toss everything and place back in the oven for another 10 - 15 minutes, until vegetables and sausage are cooked through.
Sprinkle with sea salt and pepper to taste.
Options ~ add fresh herbs (thyme, sage, rosemary) while roasting, and/or garnish with pesto.
